On Saturday 4 November 2023, Blackfriars will host, in partnership with Durham University’s IMEMS (*), the 22nd Public lecture on The Culinary Recipe in Late Medieval England: An Experiment in Taste.
Reflecting on her collaborative research with Blackfriars, PhD student Florence Swan will explore the idea of taste in culinary recipes in late medieval England. Through a reconstructive study of culinary recipes, she will also address the relationship between the cuisines of regions such as England, France and the Middle East, and to what extent ‘taste’ in a gastronomic sense influenced the content of medieval recipes.
The lecture will explore these themes through an interactive lunch which will be served in parts throughout Florence’s lecture during which diners will be encouraged to reflect on the tastes, textures, appearance, and smells of the food and consider what this reveals to them about the senses in late medieval England.

TIMES: 11am arrival for 11.30am start
COST: £35 per person including arrival tea or coffee and a suitably medieval-themed 3-course set lunch served communally. Places are only confirmed once paid in full and are non-refundable or transferable.
