Where better than a 13th century friary to learn about medieval cuisine. Looking at some of the earliest English language cookbooks we will modernize the recipes whilst still keeping all the ingredients listed, only improving the taste for a more modern palette. You will be able to use and taste long pepper, cubeb, hyssop amongst other herbs and spices that we just don’t use any more. So, come and see how recipes from 800 years ago influence today’s food. Each student will have their own work station, equipment and ingredients to work with.
