What makes Szechuan/Sichuan cuisine so special? Hot, humid climates like this huge central-Chinese land-locked province call for food that is both hot and highly spiced because hot foods like red chilli stimulate the palate, making it more sensitive to the other flavours—sweet, sour, bitter, salty, aromatic, and fragrant. The geography and cultural differences of Szechuan are so vast, this will be no more than an introduction but we’ll do our best with rice, noodles, soy, garlic, ginger, star anise, pork and shrimp.
Come and enjoy a day of cooking before preparing your own communal lunch to enjoy with your new friends. Each student will have their own work station, equipment and ingredients to work with.

TIMES: 9.30am to 4.30pm
COST: £175 per person which includes refreshments throughout the day, a communal lunch with wine, regional beverage and coffee in the Cookery School, apron and recipes to take home. Places are only confirmed once paid in full and are non-refundable or transferable.
WHAT TO WEAR: Aprons are provided though please arrive in comfortable clothes that you don’t mind getting a bit messy.
